Living with Diabetes Day

Bran & Raisin Muffins

12 Muffins


Ingredients
  • 375g self raising flour
  • 125g whole meal flour
  • 225ml sun flour oil
  • 75g sugar
  • 100g honey
  • 6 eggs
  • 400ml skimmed milk
  • 1 x drop of vanilla essence
  • 75g raisins

Method

Sieve the flour into a mixing bowl, form a well in the centre, crack in the eggs and pour in ¼ of the milk.

Add the sugar, honey and sunflower oil and whisk together to form a smooth paste.

Gradually add the rest of the milk to make a batter.

Fold in the raisins and pour the mix into muffin moulds.

Bake at 170c for 35 minutes until mix has risen well and is light but moist in the centre.
